Two Recipes for Diabetics

When people hear they have diabetes it is often difficult finding recipes for diabetes and how to adapt to the new plan. What we want to strengthen here is, if you suffer from diabetes it doesn’t mean that you can never have tasty and delicious food on your table.

Don’t consider that your diabetic food should be tasteless. We have found that quite a lot famous diabetic nutritionists have compiled simple diabetic recipes for all types. We would like to propose two easy recipes for diabetics. It  is easy to cook and will add some flavor in your daily menu. One for breakfast and one for dinner.

You often feel so much better after you have had a nutritious meal with fresh fruit and vegetables that would refresh yourself. Breakfast is a great place to start.

Pancakes with fried banana

You will need:

2 bananas

100g self raising wholemeal flour

2 eggs, beaten

pinch of cinnamon

300ml buttermilk

You should slice the banana in half and fry with a little olive oil in the pan, whisk the flour and buttermilk together. If you would like it thinner then you can add a little milk at the end. Whisk in the eggs and add cinnamon. Then you should heat the pan and start making the pancakes.Serve with the bananas and sprinkle some diabetic sugar on top.

Dinner:Tomato crostini.

you will need:
4 plum tomatoes, chopped
1/4 cup minced fresh basil
2 teaspoons olive oil
1 clove garlic, minced
Freshly ground pepper
1/4 pound crusty Italian peasant bread, cut into 4 slices and toast

Combine tomatoes, basil, pepper, garlic and oil  in a medium bowl. Cover the bowl and let stand 30 minutes. Divide tomato mixture with any juices among the toast. Serve at room temperature.
